300 sandwiches…

Recently I came across a new blog, 300 sandwiches.

It’s premise?

My boyfriend E is obsessed with two things: Star Wars and sandwiches. During a Sunday lunchtime viewing of “Return of the Jedi” he told me: “you are 300 sandwiches away from an engagement ring!” … And so, I got cooking …

Not only is the blog funny and entertaining, but it’s full of delicious recipes to try.

I don’t generally eat many sandwiches… too many years of being told carbs are bad for you, but now I know that good carbs are a great post workout fuel source, and healthy bread is ok to have in small portions, it’s sandwiches all the way. They’ll also make an ideal lunch whilst at my new job, although home made and gluten free of course.

So here’s one of her recipes I replicated this week.

Grilled cheese & pear

  • 2 slices bread
  • 3 slices brie
  • 2 tbsp honey mustard dressing
  • 1/2 pear
  • 2 tsp butter
  1. Butter the bread
  2. Place butter side down on a George Forman/toastie etc…
  3. Layer the cheese, pear, and dressing between the two slices
  4. Grill for 2-3 minutes until the cheese is melted
  5. Enjoy
